The Premium grade are from Pasture fed British Bred Cattle from the Gippsland Region. These cattle range in age from 24-36 months and graze on excellent pastures that include natural clover and rye grasses. Gippsland is famous for is temperate climate, with good rainfall throughout the year.
This ensures the cattle have plentiful food and enjoy a happy life without having to deal with extreme weather events. After slaughter the bodies are chilled for a minimum of 24 hours and then they are hand selected after grading for Meat Colour, Fat Colour and a Marble Score of minimum 2. This is a unique seasonal product – Natural Pasture Fed Beef with true marbling – which is only available for a few months a year.
