Butterfly pea (Clitoria ternatea L.) is a climbing legume (Leguminosae) that has small flowers that are beautiful and funnel-shaped. It originated from tropical Asia but now was widely distributed in Central and South America, India and China. The blue color flower is popular in Thailand, Malaysia, Indonesia, and the Philippines as an edible food dye and also brewed into tea. The butterfly pea flower is unique as the extracted dye has the ability to change colors depending on the pH of any ingredient that is added to it. At its first brew, the beverage has a deep, midnight blue color but a squeeze of lemon or any acidic liquid, can change its color to violet and further to pink. This natural dye is also easy and convenient to be used in all-purpose with blue coloring in baking and food decorating. Butterfly Pea Flower cocktail
Mix 2 teaspoon butterfly pea flower extract liquid, 4oz water & 1 teaspoon warmed honey. Serve over ice. Pour 1oz lemon juice on top. Transform into a cocktail by adding white rum or vodka.
Butterfly Pea Flower Tea or Beverage
Measuring 1 to 2 teaspoon of Butterfly Pea liquid and add into 200ml warm water. Stir it well and put aside first. Squeeze the lemon juice into the 100ml water and add some honey into it. Pour the honey lemon into serving glasses with ice, then add the Butterfly Pea Tea and you will see the Butterfly Pea tea change clour to purple. Then a Butterfly Pea Lemonade is ready to serve.
Direction of Use
Use for baking or beverage wherever a recipe calls for a flavor, color & nutrient. Begin with 1 tablespoon for each 4oz / 113g cup of ingredients and add more depending on desired strength. Alternatively, can add to ice-cream, kuih-muih, jelly, cake, biscuit, jam, pudding, chocolate, bao/bun, bread, dessert, popcorn, grazing & filling.
Store in a refrigerator after opening.
Shake well before use. Mix well with herbs & spices.
